Popcorn for Breakfast

Who says you can’t have popcorn for breakfast? Here’s a simple recipe combining popcorn with other left overs for breakfast.

Ingredients:

left over fried chicken

cooked peanuts

corn (for popcorn)

red bell pepper

carrots

cucumber

garlic (2 cloves)

Hunt’s chili with beans and beef (1 can)

Nestle’s all purpose cream

Del Monte Italian spaghetti sauce

salt and pepper

Directions:

1. Shred the left over fried chicken and put in a bowl.

2. Combine the cooked unshelled peanuts in the bowl.

3. Finely chop the red bell pepper, carrots, cucumber and garlic and set aside.

4. Cook the popcorn.

5. Combine the popcorn with the chicken and peanuts.

6. In the same cooking ware where the popcorn was cooked put the chopped garlic and heat it until some are a bit brown.

7. Pour the chili with beans and beef onto the pan and mix the sauce and garlic.

8. When the sauce is simmering add the red bell pepper, carrots and cucumber.

9. For extra sauce add and mix some spaghetti sauce.

10. Add and mix all purpose cream until the sauce turns orange.

11. Add salt and pepper to taste.

12. Pour the sauce over the chicken, peanuts and popcorn. Mix if preferred.

You can eat it as it is. You can also pour it on rice as a rice topping or on mash potato instead of gravy. If you added more spaghetti sauce pour it on pasta noodles. Happy eating! :)
